Whipped Feta Dip w/ Sweet & Spicy Scallion Sauce

Ingredients:

  • Two eggs one pan chilli oil
  • Feta Cheese 200g
  • Ricotta Cheese 200g 
  • Greek Yoghurt 100g
  • Green Onions 3 stalks finely sliced (white and light green parts)
  • 2 Tbsp Honey
  • 3 Tbsp Extra Virgin Olive Oil

Method:

  1. In a food processor, pulse together the feta, ricotta & greek yoghurt. Be careful not to over-whip, as it will go runny. This should only take a couple of seconds.
  2. Spoon the mixture onto a decorative plate and place it into the refrigerator.
  3. In a small saucepan, heat the olive oil on medium heat. Once warm, toss the green onions into the plan. Stir occasionally.
  4. Once soft and fragrant drizzle in the honey. Stir and set aside to cool. 
  5. With the back of the spoon, create a spiral pattern into the whipped feta creating slight indents to cradle the green onion sauce.  
  6. Once the green onion mixture has cooled down, add 1 tsp of the TEOP Chilli oil and give it a good stir to combine. 
  7. Pour over the mixed feta. 
  8. Garnish with some flaked salt. 
  9. Optional: For added heat, dollop small drops of the TEOP chilli oil on top to give a rich pops of red.
  10. Serve with some warm toasted bread.
