Ingredients:
- Two eggs one pan chilli oil
- Feta Cheese 200g
- Ricotta Cheese 200g
- Greek Yoghurt 100g
- Green Onions 3 stalks finely sliced (white and light green parts)
- 2 Tbsp Honey
- 3 Tbsp Extra Virgin Olive Oil
Method:
- In a food processor, pulse together the feta, ricotta & greek yoghurt. Be careful not to over-whip, as it will go runny. This should only take a couple of seconds.
- Spoon the mixture onto a decorative plate and place it into the refrigerator.
- In a small saucepan, heat the olive oil on medium heat. Once warm, toss the green onions into the plan. Stir occasionally.
- Once soft and fragrant drizzle in the honey. Stir and set aside to cool.
- With the back of the spoon, create a spiral pattern into the whipped feta creating slight indents to cradle the green onion sauce.
- Once the green onion mixture has cooled down, add 1 tsp of the TEOP Chilli oil and give it a good stir to combine.
- Pour over the mixed feta.
- Garnish with some flaked salt.
- Optional: For added heat, dollop small drops of the TEOP chilli oil on top to give a rich pops of red.
- Serve with some warm toasted bread.
